THIS is a brand-new, never posted before recipe that is gonna blow your taste buds outta this world!

If you’ve been following along you know that I love to whip up some energy balls. Usually I make a batch up once a week (they definitely don’t last a week, FYI). I love these as part of breakfast if I’m running out the door, if I’m needing a snack between clients, or pre/post-workout.

I actually had a similar version of these from a local cookie store; a store, I might add, that I’m forced lucky enough to walk by everyday 😉 This particular recipe is sweet, salty and a bit tangy. What else could you need?

Chocolate lemon clusters

Chocolate Lemon Clusters

1 cup organic figs (could also use dates, but try the figs)

1/2 cup unsweetened, organic coconut flakes

1/2 cup almonds

1-2 Tblsp. honey

1/3 – 1/2 medium sized 72% dark chocolate bar (I used a dark chocolate + mint variety, and thumbs way up)

1 Tsp. cinnamon

zest of 1 lemon

dash or 2 of sea salt

Throw everything in the food processor (have I told you how this gadget has changed my life? Seriously, invest). Chop it up until it’s all in fine chunks. Scoop out and roll into small balls. Keep in the fridge for best results!
